Combo’s Chicken and Broccoli Pasta Salad

The other night I was brave (or crazy) and tried a new main and side dish. Luckily they were both very good. I will be adding these to my dinner list!

First the chicken. It is a Rachel Ray 30 minute meal, cheddar crusted chicken. I call it Combo’s chicken because it smells like Combos – you know pretzels with cheese inside. Below is the recipe but next time I make it I will do a few things differently. First I will probably do 1 1/2 cup of pretzel and only 1/2 cup of bread crumbs. It wasn’t as flavorful as I thought it could be. Second, I wasn’t a big fan of frying it in oil. It was very crispy, which I liked, but I just felt like it has a oily taste. Next time I think I may try coating it in light mayo and baking it. It may make it a little healthier 🙂

Combo’s Chicken
Four 8-ounce skinless, boneless chicken breasts
1 cup salted baby pretzels
1 cup plain bread crumbs
1 cup shredded or crumbled sharp cheddar cheese
1 tablespoon fresh thyme, chopped (didn’t use)
1/8 teaspoon freshly grated nutmeg (eyeball it) (didn’t use)
Freshly ground pepper
1 large egg
All-purpose flour, for dredging
Vegetable oil, for frying
Salt

Instructions:
Place 1 chicken breast in each bag, push out the excess air and seal it up. Using a heavy-bottomed pot, pound each breast until evenly thin, just shy of busting out of the bag.

Place the pretzels, bread crumbs, cheese, thyme, nutmeg and pepper in a food processor and pulse to grind until they’re the consistency of bread crumbs. Transfer the ground pretzels and cheese to a shallow dish.

Crack the egg into a second shallow dish and lightly beat with a splash of water. Place some flour in a third dish. Coat the chicken first in flour, then egg and finally in cheese and pretzel crumbs.

In a large skillet, heat 1/4 inch of oil over medium-high heat and add the coated chicken breasts. Cook in a single layer, 3 or 4 minutes on each side, until the juices run clear and the breading is evenly browned.

Not to the side dish…It is a pasta dish with broccoli, so delicious and healthy! You can click here to see the recipe, you may have the ingredients in your house.
