I like to create a list of enough dinners for use to have for about 2 weeks. This keeps me out of the grocery store (except for milk and produce) and we don’t go out to eat as much because I have a plan! I don’t assign days, so I just have a list of the dinners we can make and in the morning we decide what we want for dinner. It’s also nice because we can plan a dinner according to how busy our day will be.
In the next 2 weeks we will celebrate my son’s birthday. So he will get to pick out what he wants for dinner. We will go out to eat. We will also have a party for him on a separate day so that’s another night I will get out of dinner planning.
Chicken Tinga Tostadas with Mexican Rice (Great recipe for Cinco de Mayo!)
Rotisserie Crock Pot Chicken with potatoes and zucchini (Im gonna try this with bone-in breasts because we don’t eat the dark meat.)
Slow Cooker Pulled Pork Sandwiches – french fries and broccoli
Picadillo – Mexican Beef Dinner with rice
Lasagna
Chicken Tetrazzini (Recipe to come this week)
Chicken Cordon Blue Casserole
Salmon for adults/pasta for kids twice baked potatoes
Fettuccine Alfredo with salad
There’s only 10 meals because 2 meals are for my son’s birthday and the other nights we will probably eat leftovers. Im going to prep and freeze all the crock pot meals to make my life even easier.
I also plan on making Pizza muffins, Calzones, muffins, and granola.
