Oatmeal White Chocolate Chip Cookies

Sharing is caring!

Oatmeal White Chocolate Chip Cookies

Here is another “clean out the pantry recipe”. The other day I made no bake energy bites , Fake Rice A Roni, and Bacon Ranch Chicken Pasta to use up some ingredients in my house.

I had some white chocolate chips and I know my friend loves oatmeal cookies. Since her birthday is Saturday, I threw together a batch of these for her (and us) to enjoy!

Oatmeal White Chocolate Cookies

  • 1 cup butter
  • 1 cup brown sugar
  • 1 cup white sugar
  • 2 eggs
  • 2 teaspoons vanilla
  • 3 1/4 cups flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp salt
  • 1 1/2 cups old-fashioned oats
  • 1 cups white chocolate chips

Directions:

  1. Preheat oven to 350°F.
  2. Cream together the butter and sugars until smooth, then beat in eggs and vanilla.
  3. Add the flour, baking powder, baking soda, and salt, and mix.
  4. Stir in the oats and white chocolate chips by hand, then drop dough in golf ball-size portions onto ungreased cookie sheets. I have a wonderful cookie scooperI bought last year on Amazon and it makes the perfect cookie!
  5. Bake in preheated oven 8-10 minutes. They looked a little gooey on top but they were perfect.

Makes 4 1/2 dozen cookies.

Here’s a picture of the cookie scooper and the dough balls it makes.
