This strawberry cake recipe is so easy to make, and it will be so fluffy and light, almost like an angel food cake. And the topping…It’s whipped cream but a little thicker with soft peaks like a mousse and tastes like white chocolate topped with real strawberries.

When it’s strawberry season, I love recipes that use fresh fruits between the cake layers. It gives it so much sweet strawberry flavor.

This is a semi homemade vanilla cake recipe. You start with a cake mix but then you add ingredients to make it better. You do not use the ingredients listed on the box.

This light and delicious layer cake is the perfect cake! It’s a combination of a homemade white cake, strawberries, and a white chocolate mousse is a better version of strawberry shortcake.

Moist Vanilla Cake With Strawberries and White Chocolate Whipped Mousse

  • 1 box White Cake Mix (do not use the directions on the box)
  • 1 cup all purpose flour
  • 1 cup sugar
  • 1 cup sour cream
  • 1 1/3 cup water
  • 2 Tablespoons vegetable oil
  • 4 egg whites
  • 1 quart of fresh strawberries – divided (or more if you like them)
  • water
  • Sweetener of your choice

 

Instructions to make the cake batter:

  • Preheat oven to 350*. Line 2 – 9 inch round pans with parchment paper and spray the paper and sides with nonstick spray and set aside.
  • In a medium bowl in a stand mixer fitted with a paddle attachment, add the dry ingredients to the bowl of a stand mixer: cake mix, flour, and sugar. Mix on low speed for about 30 seconds.
  • Add the wet ingredients to the flour mixture: sour cream, water and oil. Mix until combined scraping the sides of the bowl with an offset spatula.
  • Separate the egg yolks and the egg whites one at a time and add 1 egg white at a time. Mix on
  • Once all the eggs are in, mix for about 90 seconds.
  • Divide batter between the 2 cake pans. Bake cake for about 22-25 minutes. Use a butter knife to check for doneness in the center of the cake. until a knife come out clean. If you need to add more time, do it in 3 minute increments.

Let the vanilla cake cool completely on a cooling rack. Put one cake on a plate or cake stand. I like to flip the cake into my hand and remove the parchment paper and then put it baked side down on the cake plate. Trim the cake to make it even. (You can place the cakes in the freezer to handle them easier.)

 

White Cake With Strawberries and White Chocolate Whipped Mousse

 

To make the delicious strawberry filling: Dice the strawberries. Mix the strawberries in about 3 Tablespoons of water and a sweetener of your choice. I like 1 packet of Stevia but you can also add 2 teaspoons of sugar.

Let sit for about 10 minutes and drain the excess water. Save some of the strawberries for the topping. 

 

Heavy Whipped Cream Frosting (White Chocolate Mousse Flavored)

  •  2 cups of heavy whipping cream
  • 1/3 cup of powdered sugar
  • 1 Small box of instant white chocolate pudding
  • 1/4 cup of milk (to help get the desired consistency)

Instructions to assemble the strawberry vanilla cake:

  1. About 1 hour before you are going to make the whipped topping place the large bowl and mixer into the freezer.
  2. Place the heavy cream into a large mixing bowl with the whisk attachment and whip on high speed until stiff peaks form.
  3. While the mixer is on, slowly add in the powdered sugar and pudding mix.
  4. Test it when it’s combined. If it is too thick you can add milk to make it a little thinner.

To assemble:

Place one layer of the fluffy vanilla cake on a plate. Top with a strawberry layer and add the second cake layer. Cover the outside of the cake and the sides with the Whipped White Chocolate mousse.

 

Top with more strawberries and enjoy within a few hours. Refrigerate the cake until it is ready to be served.

Notes to make this Strawberry Vanilla Cake:

  • You can double the whipped white chocolate mouse recipe to add some cream to the middle. But this is a perfect combination of all the flavors.
  • You can use an electric mixer (hand mixer) if you don’t have a stand mixer.
  • Flip the cakes over onto a wire rack to cool. It will also help flatten the top of the cake.
  • Add some red food coloring if you want to change the color of the icing.
  • You can also use 8-inch cake pans – but 9 inch cake pans are better. 
  • To thin out the fresh whipped cream you can add your milk of choice.
  • This recipe works best with fresh strawberries. Do not use frozen strawberries or freeze-dried strawberries.
  • You can make the cake ahead of time and freeze them. Wrap it in plastic wrap until it’s ready to be used.
  • If you have leftovers, place them in an airtight container and store in the refrigerator.
  • My local grocery store doesn’t carry white chocolate pudding. So when I go to a store that has it I grab a few boxes.
