With more allergies to natural peanut butter and almond butter – it’s hard to find a no bake recipe that is allergy-friendly for people with peanut allergies. This recipe is also gluten free. So it will become one of your favorite recipes to make for a crowd and you will not miss the peanut butter flavor!

These are definitely a little different than peanut butter no bake cookies but they have a yummy chewy texture!

Tips:

  • If you only have unsalted butter you can add 1/2 teaspoon butter to the mixture.
  • Most no bake cookie recipes use quick oats. You could use old-fashioned oats but they are not as small as quick cooking oats.
  • I haven’t tried it but next time I may try to make a chocolate version with chocolate pudding.

No Bake Cookie Recipe Without Peanut Butter

Ingredient list

  • ¾ cup salted butter (12 Tablespoons)
  • 1 ¾ cups of sugar
  • ⅔ cup milk
  • 1 teaspoon vanilla extract
  • 1 small box of instant vanilla pudding
  • 3 ½ cups of quick oats

Directions No Bake Cookie Recipe Without Peanut Butter:

Line your countertop with a parchment or wax paper sheet about 2 feet long. Or line prepared baking sheets.

Combine the white sugar, milk, and butter in a medium saucepan. Mix until combined.

Heat over medium heat on your stove top until the mixture comes to a boil that you can’t break up by stirring.

Allow it to boil for a full minute, then remove from heat.

Add vanilla extract and stir.

Add 1 ½ cups of instant oats to the saucepan and stir.

Add ½ of the instant pudding and stir.

Add the remaining pudding and mix until you can’t see the pudding mix. Break up any pudding lumps that may be in the mix.

Add in the remaining oats and mix well.
