Perfect Chocolate Chip Muffins

I love muffins but I have never been good at making them. They are always dry. I want my muffins to taste like Costco muffins or like Starbucks. I figured, why not start with a cake mix. My cakes are really moist - so I did it. They came out awesome! Another bonus is - they aren't huge! Your family will love these muffins. We made Chocolate - Chocolate Chip Muffins but next time I am going to make them with the vanilla cake mix.

Perfect Chocolate Chip Muffins

  • 1 box of chocolate or vanilla cake mix
  • 3 Tablespoons pudding powder* (chocolate for chocolate/vanilla for vanilla)
  • 3 eggs
  • ⅔ cup milk
  • ⅓ cup oil
  • 1 teaspoon baking powder
  • ¾ - 1 cup of chocolate chips

Instructions

  1. Pre-heat oven to 375. Grease 18 cupcake tins or line with liners.
  2. Combine all the ingredients - except the chocolate chips.
  3. Fold in the chocolate chips.
  4. Pour into 18 muffin tins - about ¾ full.
  5. Bake for 20-25 minutes until the center is firm to the touch. This is a very moist cake so it may have cake on it when you test it.

*I always put pudding mix in my cakes - so save the leftover pudding powder and add it to your next cake. It will be delicious!

I am also going to play around with trying to make lemon poppy seed and blueberry muffins.

 

I love to use cake mixes to elevate my desserts. This Cherry Chip Cake is so good and it starts with a white cake mix!
