Strawberry & Spinach Salad With Poppy Seed Dressing

Strawberry Spinach Salad

I am not very good at eating healthy. I have been trying to eat more salads, and I need something a little more than just lettuce and Italian dressing. I saw this Spinach Salad recipe and knew I had to try it. This salad has a serving of veggies and fruits!

Her dressing recipe had just a little too much sugar for me so I cut it down a little bit. I loved using Greek Yogurt for the dressing. It made it so light and so much healthier than mayo based recipes.  You can make this salad to fit your tastes. I just cut up some strawberries and threw them over a bowl of baby spinach. They I added some sliced almonds.

Poppy Seed Dressing Recipe

  • 3 Tablespoons sugar
  • 3 tablespoons apple cider vinegar
  • 1 tablespoon olive oil
  • ⅔ cup plain Greek yogurt
  • 1 ½ teaspoons poppy seeds

Instructions:

In a container with a lid, add all the ingredients. Shake well and serve. It will probably last for about 2 weeks – if you don’t eat it all before then! (Or until the yogurt would have expired.)

If you are looking for a refreshing and delicious salad – you must try this.  It is strawberry season and this is a great way to eat them!
