Egg & Cheese Breakfast Recipe

I love to have an egg cheese recipe for breakfast! This was a recipe that I always had when I would spend the night at my grandma’s house!

This Cheese and Egg breakfast recipe is a recipe I had many times as a child. My family has some interesting recipes that have been passed down. It’s also a Keto friendly breakfast option!

One breakfast meal I remember eating with my grandma is cheese and egg. It’s not your typical scrambled eggs with cheese inside. This is cooked in a saucepan and has a little bit of liquid when it’s all cooked that is like a gravy. I remember my family dipping toast into that gravy.

With just 3 simple ingredients – you can make this yummy and unique Cheese and Egg breakfast for your family. This recipe makes enough for 4 people when you serve it with some bacon.

For best results, take your time making this recipe so it doesn’t burn. Use a wooden spoon or rubber spatula to mix the eggs. In the end, it has a cottage cheese type of consistency. It’s a great breakfast!

It’s a filling and healthy breakfast – it’s perfect if you are looking for brunch recipes.

If you want to make pancakes instead – you can make these fluffy pancakes and you don’t need any buttermilk!

Variations to this egg recipe:

  • Top it with green onion for extra flavor.
  • Sprinkle in a little chili powder or cayenne pepper for an extra kick
  • Or a dash of hot sauce on top when they are done
  • Top with some parmesan cheese
  • Switch out the cheddar cheese for pepper jack cheese
  • We use mild cheddar but you could use sharp cheddar cheese

How to make cheesy eggs – Scroll to the bottom for the printable recipe.

All you need is a few basic ingredients – 6 eggs, 8 ounces of cheddar cheese, and a cup of water. Plus you can add a pinch of salt and black pepper according to your preferences.

Add your 6 large eggs to the saucepan and mix well. Add the water and mix it together. (Do this so you don’t have another large bowl to wash.)

Cut up the cheese into small cubes and add them to the egg mixture. (Sorry the pictures aren’t very pretty – it’s not a pretty meal while it’s cooking but I want you to see how the texture changes.)

Cook on medium-low heat stirring occasionally. As it cooks, the liquid separates from the eggs.

It’s a simple breakfast and the great thing is that it will all come together in about 10 minutes. It’s not your typical scrambled eggs texture. (Avoid medium-high heat – it will cook too quickly and burn.)

This is a great recipe when you have several people ready to eat breakfast! We serve it with slices of bacon!! It’s such a good combination.

Bacon tip – I have been cooking my bacon in the oven. It’s so much easier and it’s always the perfect crispness. I put foil on a baking sheet and add the bacon.

Turn on the oven to 425* (don’t preheat it) and bake for 10-14 minutes. This depends on the thickness of the bacon and how crispy you like it.

How do you normally like your eggs? I love a runny yolk so I can dip my bread in the egg yolk. I also love a good breakfast sandwich where the cheese melts on the bread and is all combined with the scrambled eggs and bacon. Sometimes it’s easier to throw everything into a baking pan and make some cheesy baked eggs.

My sister has chickens and we get a lot of eggs – so this is a great way to use up the eggs and have a unique breakfast! Make it for Easter Sunday or any morning!
