When it comes to baking cake, I love making bundt cakes because they are so easy! They always turn out perfect, and you do not need any decorating skills because a sweet glaze is all you need. There are so many pans you can buy to make them beautiful!
This cake is so moist – it has a bar of cream cheese in it and a small box of pudding powder! (The pudding powder is a secret in my cakes!)
Last week I passed by Sister Schubert’s Lemon Blueberry sweet rolls. They were so yummy – even though it didn’t include any icing. But it inspired me to make my own icing that was so delicious!
I really love the combination of lemon and blueberry and with a fresh package of blueberries in the fridge – I had to make a lemon blueberry dessert!
This recipe is so easy to make and my whole family loved it. We made it on Mother’s Day and I love to watch my daughter help me bake.
She has learned to cook a lot of things these past few weeks while she has been doing school at home. She can easily cook eggs for breakfast and I think she could make some bacon in the oven if she was hungry enough. And a few times a week – she will grab my cookbook and whip up a delicious dessert!

Lemon Blueberry Bundt Cake With Lemon Icing
- 1 8oz package of cream cheese, softened
- 1/2 cup oil
- 1 box yellow cake mix or lemon cake mix for extra lemon flavor
- 1 box 5oz package vanilla pudding powder
- 2 eggs
- 2 egg whites
- 2 teaspoons vanilla extract
- Lemon zest from 1 large lemon
- 2 Tablespoons fresh lemon juice
- 1 cup fresh blueberries
Lemon Icing Ingredients:
- 1 cup powdered sugar
- 1 tablespoon butter, melted
- 1 teaspoon vanilla
- 1 Tablespoon fresh lemon juice
- 1 Tablespoon water
- Optional, a sprinkle of lemon zest
Lemon Blueberry Bundt Cake Instructions
Preheat your oven to 325*. Heavily grease a bundt pan. Tip – use shortening or butter and save a little bit of the pudding powder and sprinkle that into the grease bundt pan – this will help it release from the pan better. If you don’t have pudding powder – use flour.
Mix together the cream cheese and oil with an electric mixer until creamy.
Add the cake mix, pudding mix, eggs, vanilla, lemon zest, and lemon juice. Mix until well combined.
Fold in the blueberries and add to the bundt pan.
Bake for 50-60 minutes. Remove and let cool for 20 minutes before you transfer it to a plate.
Lemon Icing Instructions
- Mix together all the ingredients. Let it sit for a few minutes to get a little thicker and drizzle it over the cake.
Serve and enjoy!
