Here is the best Peanut Butter Sugar Cookie Recipe! You can never have too many peanut butter cookie recipes! This is a spin on classic peanut butter cookies with simple ingredients.

I like that they are sorta like a sugar cookie with some peanut butter and the extra drizzle on top is a nice gooey topping that really elevates the peanut butter flavor.

These are a little different than other sugar cookies – I don’t add the criss-cross pattern. They are soft peanut butter cookies. I let them bake like a normal cookie and they get nice crispy edges.

To get into the holiday spirit I am preparing to make all the best cookies! I will make classic cookies – like chocolate chip cookies and peanut butter blossom cookies. Sometimes we change the kisses to peanut butter cups.

Tips For Easy Peanut Butter Cookies Recipe

  • Do not use natural peanut butter. This has too much oil so the cookies will not bake correctly.
  • I do not separate the wet ingredients from the dry ingredients. I like to put it all in 1 large bowl. I mix the wet ingredients well and then add the dry ingredients to the mixture.
  • I like to use the paddle attachment of my stand mixer but you can also place it in the bowl of electric mixer (handheld or stand mixer). Make sure you use a rubber spatula to scrape down the edges.
  • The best thing is, you can get creative with this recipe. Add some chocolate chips or use crunchy peanut butter instead of creamy peanut butter.
  • Don’t add too much flour. The cookies will be dry and it will not be a soft cookie.

Peanut Butter Sugar Cookie Recipe

  • 1 ½ cup all purpose flour
  • 1 teaspoon baking soda
  • 1/2 cup unsalted butter, room temperature (1 stick of butter)
  • Pinch of salt
  • ½ teaspoon of baking powder
  • ½ cup of packed light brown sugar
  • 1 large egg
  • ½ cup sugar
  • 1 teaspoon vanilla
  • 1 cup smooth peanut butter
  • ¼ cup of sugar – for coating

 

Optional Peanut butter glaze for Peanut Butter Cookies:

  • ½ cup peanut butter
  • 2 to 4 tablespoons of heavy cream or milk
  • 2 cups of powdered sugar

 

Directions:

Prepare a cookie sheet with parchment paper, or lightly spray with nonstick cooking spray and set the prepared baking sheet aside.

Heat oven to 350 degrees.

 

 

Cream butter, brown sugar, and white sugar for 1 minute on medium speed.

 

 

Add egg and vanilla, mix for 1 minute.

 

 

Add peanut butter and mix for 1 minute.

 

 

Add salt, baking powder, baking soda, and flour. Mix until well combined.

 

 

Use a cookie scoop to drop the peanut butter cookie dough into the coating sugar. You want to coat it in a little granulated sugar. It is important to scoop and not roll these cookies! Place the cookies on the cookie sheet about 2” apart.

 

 

Baking Time: Bake cookies for 11-13 minutes – until the edges are a light golden brown. Remove from the oven and allow to cool for 20 minutes. Place them on a cooling rack.

When the cookies are cool make the glaze.

Peanut butter glaze Instructions:

  1. Melt the peanut butter in the microwave, for about 30 seconds to 1 minute. Check on it after 30 seconds!
  2. Whisk the heavy cream into the peanut butter, and begin adding powdered sugar, stirring as you add. 
  3. When the mixture becomes a thick peanut butter icing, drizzle it over the top of each cookie. The ideal consistency is like hot fudge or caramel sauce.
  4. Allow the glaze to dry for about 20 minutes.

I usually can’t wait that long. I really love the first bite of a warm cookies – so if you can’t wait enjoy them. Just know it will be a crumbly cookie.

Store them in an airtight container for up to 5 days. 

Enjoy the best peanut butter cookies anytime! If you don’t want to bake all the cookies you can use the remaining dough to make 1-inch or 2-inch balls of dough and freeze them to bake them at a later time. Make sure you put them in a freezer bag. Bake them for an additional minute.
