I love this easy casserole recipe because it’s so versatile! You can customize it to make it a family favorite. You can use what you have in your fridge and pantry to make this Dorito taco casserole!

This tasty dinner has so many possibilities. Add this Mexican casserole to your Taco Tuesday menu. It’s a great recipe to make for a church potluck meal. It’s even a delicious casserole to bring to a new mom or someone that just had a medical procedure.

It’s comfort food and it’s easy to throw together and tastes delicious when it’s reheated the next day.

Ingredients for Ground Beef Doritos Casserole:

Olive oil – you will need this to saute the onions and garlic

Medium onion – I prefer a yellow onion for this meal but if you are in a hurry you can use frozen diced white onions.

Garlic – every meal needs some minced garlic cloves for extra flavor

Lean ground beef  (about 1 pound) – This is a hearty casserole made with ground beef. If you don’t have a lean ground beef – just drain out the extra grease before you add the rest of the ingredients. You could also use ground chicken or ground turkey if that is all you have. This recipe has so much flavor – no one will be able to tell what kind of taco meat you are using!

1 (10oz) can Rotel with chilis and lime juice (undrained). We like the flavor of the lime juice – but if you don’t have the one with lime juice – just use what you have. You can also use diced tomatoes and green chiles to add some extra spice.

1 package of taco seasoning – use your favorite brand or check out my homemade taco seasoning.

3/4 cup salsa – I love that this doesn’t use a whole jar of salsa. You can enjoy the rest with some chips or use it for another meal.

Sour Cream – every Mexican ground beef casserole needs sour cream! You need it in the casserole and then a little bit on top for extra creaminess.

2 cups of cheese! I love to use Cheddar cheese but Monterey Jack cheese is also delicious. If you love loads of cheese you can add another cup of cheese.

Nacho Cheese Doritos (9.75 oz bag) – This is the star of the show! It adds that extra nacho cheese flavor to the casserole. It’s really fun to take the crunchy Doritos and smash them into small pieces! If you crush them in the bag – just do it easy because the bag can break.

My family can’t control themselves around a bag of Dorito chips (Nacho or Cool Ranch Doritos). So if your family eats some of the chips before you make this meal – you will be ok! 🙂

Optional ~ your favorite taco toppings! You can add some black beans, fresh cilantro, green onions, black olives, bell peppers, pinto beans, etc.

Instructions For Easy Dorito Casserole Recipe

Grab a 9×13 casserole dish and set it aside. Preheat the oven to 350 degrees.

In a large skillet add the olive oil and heat over medium heat. Add the onions and saute for a few minutes until they are translucent.

Add the garlic and stir for about 1 minute.

 

 

Add the ground beef to the pan and cook until it’s completely cooked. Drain the excess fat.

 

 

 

Add the taco seasoning, salsa, sour cream, and a can of Rotel, and cheese to the meat mixture and remove from the heat.

 

Now for the layering process! Some people like to layer half of the meat mixture, sprinkle half of the crushed Doritos, and half the cheese. And then repeat with the remaining meat mixture and remaining ingredients.

I like to make things simple – so I add about a handful of the crushed Doritos tortilla chips and cheese to the ground beef mixture and pour all of that into the baking dish. Then I top it with the cheese and crushed chips. Then I cover it with aluminum foil and bake for 20 minutes.

It’s a good thing this recipe makes a lot! Store the leftovers in an airtight container and enjoy this meal within 4 days. Reheat in a microwave safe container in 30-second increments stirring each time.

I do not recommend freezing this meal because the layer of Doritos may become soggy when you reheat it.

  • 1 Cup Sour Cream
  • 2 cups of cheese I love to use Cheddar cheese or Monterey Jack
  • Nacho Cheese Doritos, crushed (9.75 oz bag)
  • Optional ~ your favorite taco toppings - black beans, fresh cilantro, green onions, black olives, bell peppers, pinto beans, etc.

  7. Cover it with aluminum foil and bake for 20 minutes.
  8. Add your favorite taco fixings and enjoy.

I need to make this! My kids love Doritos, and I love them too. Quick, tasty, and filling meals are always on the menu.
