Quick & Easy No Bake Energy Bites Recipe


When my kids were homeschooling they ate a lot! So I would make these Quick & Easy No Bake Energy Bites Recipe for them to snack on during the day. 

 

My 4th grader gets all her work at 8am. Her teachers are online to answer questions. They have also recorded them reading 2 chapters of their book so the kids can read along. Last week they sent home packets with questions that go with their reading. She also has her math workbook. 

She is done in about 2 hours and then during the day we will bake, paint, do crafts, and more. She also spends hours on video chat with her friends. 

My 6th grader has the hardest day. He has to be at his computer from 8-3. He has to check-in at each class and he can ask questions. But don’t feel bad for him – he’s super smart and gets through his stuff fast. So I see him playing games in another browser after he’s done with his work. 

My oldest is in 9th grade. All his work is released every morning. He is doing work, listening to lectures, and taking tests. He’s even playing his trumpet every day for his band class. He gets done in about 4 hours. He spends the rest of the day playing with friends. Sometimes it’s D&D via video chat and other times it’s on his Xbox. 

I am not sure how long all of this will last but I am very proud of how my kids are handling this. They have been getting along and helping each other. (So thankful for my 9th grader to help with math!) 

So now that I have my kids home all day – my kitchen is a mess! We are making so much food. It’s fun but we are still looking for shortcuts. A few years ago I share a recipe for No-Bake Energy Balls. This is pretty much the same recipe but much faster and makes a lot more! 

In my original recipe, I used my cookie scooper to make balls and that takes forever! So this recipe makes even more and it’s easy because you make them into nuggets!

No-Bake Energy Bites

  • 2 cups old fashion oats
  • 1 cup Rice Krispies
  • 1  cup peanut butter
  • 1  cup mini chocolate chips
  • 2/3 cup honey
  • 2 teaspoons vanilla extract

Line a 9×13 pan with wax paper and set aside. Make sure the wax paper hangs over the edges so you can lift it out. 

Mix together all the ingredients.

Pour the mixture into the 9×13 pan and use a small piece of wax paper to press it evenly into the pan. (My mixture didn’t fill it completely but we did eat the scraps too!)

Pull the mix out of the pan and place it on the counter. Get a knife and cut it into bite-sized nuggets. This should make more than 60 nuggets of yummy granola bites!

Store in a container and they should last for about a week  – but they don’t last that long in my house – they hardly lasted 24 hours!

These are so easy to throw together so you have a yummy snack for your kids with only 6 ingredients!

Prep Time 5 minutes
Total Time 5 minutes

Ingredients

  • 2 cups old fashion oats
