Molten Chocolate Cake Recipe

I love chocolate and it's even more delicious when you enjoy chocolate lava cakes. There is so much chocolate oozing out of these molten cakes and it's so easy to make!
I still like to make something special for us to share after the kids go to bed. That's why I think this recipe for Lava Cakes for 2 is the perfect recipe you need to enjoy after your Valentine’s Day dinner. It's also good for a date night. I love the molten chocolate center!
It's really so simple to make so they are perfect for special occasions and they taste amazing! I love the molten center and topping it with a scoop of ice cream. The melted chocolate just oozes from the soft chocolate cake.
I have special dessert plates that are a cross between a plate and a bowl. So it can hold all the gooeyness of the dessert. This recipe has very basic ingredients - so you could probably go make it right now!
Grab these ingredients and start making a mess in your kitchen!

Tips to make molten chocolate cakes:
- You can use a double boiler on the stove top to heat the mixture but this recipe uses a microwave. Make sure you use a microwave safe bowl.
- Use 6-ounce ramekins https://amzn.to/2XeE0JB These are great when you want to make mug cakes!
- It's better to have the egg yolks at room temperature - but sometimes I don't have time for this and let them sit out as long as possible.
- I use unsalted butter for this recipe.
The chocolate decorations are optional but they are so easy and a pretty addition to this rich dessert.
Tip - when you grease the ramekin you can add a dusting of cocoa powder to help the cake not stick to the dish.
Chocolate Decorations:
- Wilton Pink Candy Melts
- Ziploc baggie
- Wax paper
- First, you will want to make the pick chocolate decorations. This is so simple. Grab a small package of Wilton Pink Chocolate Disks. Melt about 1 cup of the disks in the microwave until smooth. Pour it into a small ziplock bag and cut off a very small tip in the corner.
- Now start drawing on the wax paper. You can write love, do XOXO, hearts, etc. Let them dry and then gently remove them from the wax paper when you want to use it to decorate your cakes.
Molten Lava Cakes For 2:
- ⅓ cup semi-sweet chocolate chips
- ¼ cup butter (cut into 4 pieces)
- ½ cup powdered sugar
- 1 egg + 1 additional egg yolk
- ½ teaspoon vanilla extract
- ¼ cup all-purpose flour
- Vanilla ice cream
- Chocolate Syrup
- Pink Chocolate Decorations
Instructions:
Make the chocolate decorations first, so they are hardened by the time the Lava Cakes have finished baking.
Preheat oven to 425*. Grease 2 - 6oz ramekins with cooking spray and put the prepared ramekins on a baking sheet and set them aside.
In a medium bowl, melt butter and chocolate chips. Microwave on high for 1 minute and then stir. Repeat at 50% power in 30 second intervals until it's smooth.
Using a whisk, add the confectioners’ sugar and mix well.
Make sure the batter is no longer hot and add the egg, egg yolk, and vanilla. Mix well.
Finally, add the flour and mix until the batter is smooth.
Divide the raw batter between the 2 ramekin dishes and place it on the cookie sheet.
The baking time is 12 minutes or until the sides are firm. It will be a little soft in the middle.
Flip into a dish and top with a scoop of vanilla ice cream, hot fudge, and top with the chocolate pieces. You could even add a little whipped cream to the top of the cake.
Serve immediately!

This is so good! I have ramekins and hardly ever use them. Having individual cakes is a nice way to have something new and exciting and the decorating is so cute!
