I have been cooking a lot! I have also been trying to use up some of the things in my fridge that may go bad soon so we aren’t wasting any food.
For Easter, I made a 10 pound, spiral sliced ham…and there were only 5 of us eating dinner. So we have had a lot of ham these past few days. The recipe below is the only way I repurposed the ham. But I did make a small batch of hashbrown casserole to enjoy with the ham instead of more mashed potatoes.
This is a recipe that I have been making for over 20 years. But, I don’t think I have made it in like 5 years!
I have a Google doc of all of my favorite recipes from the first few years we were married and living in Mexico. I think it’s time for me to keep going through those recipes and share them because they are all so simple and yummy!
This recipe comes together really quickly! You can use a can of cream of chicken soup or make my homemade cream of chicken soup. It will take you about 5 minutes and 4 ingredients to make this. Plus it has a lot less sodium!
What I love about this recipe is that you are just frying it in the oil to get the bread crumbs a little crispy and brown. And then you finish baking it in the oven. (It’s just like my chicken parmesan recipe.) It’s also great because you can clean up while it bakes.
You can make this with regular bread crumbs or panko bread crumbs. It’s a great recipe to make to use any leftover ham from a holiday dinner or ham from the deli.

Easy Chicken Cordon Bleu Casserole
- 2 pounds skinless chicken breasts cut into large nuggets
- 2 cups Regular or Panko Bread Crumbs (or more depending on how much chicken you have)
- 1 Egg
- 1 1/2 cup milk, divided
- Oil for frying
- 6 slices Swiss cheese slices
- 1 cup ham, diced (you can use deli or leftover ham)
- 1 can (10oz) cream of chicken soup (or make my homemade version)
- salt and pepper to taste
Directions for Easy Chicken Cordon Blue Casserole
Preheat your oven to 350*. Place a 9×13 pan next to your stove so you can add your chicken.
Place a thin layer of oil in your frying pan and set it to medium-high.
Mix together 1/2 cup of milk and 1 egg in a shallow dish. Place the bread crumbs in another shallow dish.
Dip the chicken into the egg and milk mixture, then into breadcrumbs, coating well.
Place the chicken in a frying pan and brown until golden brown on each side. Transfer the chicken to the baking dish. (The chicken does not have to be cooked completely.)
Once all the chicken has been browned, add the ham and then the Swiss cheese over the chicken.
Mix cream of chicken soup with 1 cup of milk; mix well and pour over the casserole.
Bake, uncovered for about 20 minutes or until the chicken is cooked through and the cheese mixture is bubbling and brown. (I like to put the broiler on to bake the cheese a little more.) Add some salt and pepper to taste.
Serve and enjoy!

Nice recipe Janell, I love chicken cordon bleu, I've always stuffed the cheese in a rolled up chicken breast but this does look like an easier recipe to follow so thank you.
