What’s a Blondie?

A blondie is kinda the opposite of a chocolate brownie. Unlike chocolate brownies, this blonde brownies recipe doesn’t have cocoa powder in it and it also has brown sugar.

The brown sugar gives it more of a vanilla flavor.

The extra egg yolk and cornstarch really help pull this dessert together to make it sweet, satisfying, and gives it its chewy texture!

This is such a great basic recipe for a blondie – here are some variations:

  • Add some dark chocolate chips and pecans.
  • Add some white chips with macadamia nuts or walnuts.
  • Try peanut butter chips, chocolate chunks, or cinnamon chips!
  • Add some toffee bits or butterscotch chips for butterscotch blondies
  • Make loaded blonde brownies with a little bit of whatever you have in your home!

Tip – Add about 3/4 cup of chips and 3/4 cup of nuts for the perfect combination!

You can use dark or light brown sugar. I prefer the light so the blondies aren’t so sweet but you could use a mix of sugars, half light and half dark brown sugar to make them a little sweeter.

A blondie is almost like chocolate chip cookie bars. But it’s chewier because you melt the butter and not just room temperature. I add 2 open sticks to a glass bowl and add it to the microwave for 1 minute. It’s almost melted but not hot. It’s important that it’s not hot so you don’t cook the egg yolks when you add them to the batter.

How to mix the chewy blondie batter:

I always like to use my Kitchen Aid mixer but you could use an electric mixer on medium speed or just mix it by hand in a large mixing bowl.

The best part about these chewy blonde brownies is that they don’t take a lot of time to make. And you can elevate this blondie dessert with a scoop of ice cream.

Ingredients you will need for this easy blondie recipe:

  • 2 sticks of unsalted butter (1 cup butter)
  • white sugar
  • brown sugar
  • 2 eggs + 1 egg yolk
  • vanilla extract
  • All-purpose flour
  • Baking powder
  • Salt
  • Cornstarch
  • Your favorite chips (milk, semi-sweet, white, etc!) and/or nuts!

 

 

Instructions:

Preheat your oven to 350*F. You can spray it with cooking spray or line it with parchment paper. 

In a stand mixer or large bowl, combine melted butter and sugars and stir well.

Add in the eggs, egg yolk, and vanilla extract and stir until completely combined. 

Combine flour, baking powder, salt, and cornstarch and mix until completely combined. (Some people like to do this in a separate bowl and add the wet ingredients to the flour mixture – but I feel like it’s an extra step.

 

 

If using, add the chips and nuts until just combined. 

 

 

Spread the batter into a prepared pan using a rubber spatula and bake in a preheated oven for around 28 minutes until golden brown. (Check it after 23 minutes and then in 2-3 minute increments.) Poke a butter knife or toothpick into the center and if it comes out clean it’s done!

Allow to cool before cutting or use a plastic knife to cut the bars and this will prevent them from tearing as you cut them.
