Plus it’s pretty cheap. I was able to get my turkey for just .37 cents per pound!

And this is a great way to use up turkey leftovers even if your turkey was a little dry.

Gather up that turkey meat so you can make BBQ Turkey Stuffed Potatoes! You can easily double or triple this recipe depending on how much turkey you have leftover from your Thanksgiving feast!.

With your Turkey Leftovers make these BBQ Turkey Stuffed Potatoes. They are really so easy to put together!

Brush potatoes with olive oil and season with salt. Place in preheated oven and bake.

When the potatoes are finished baking, place the turkey and BBQ sauce in a small skillet. Stir to combine and cook until warm. Remove from heat and set aside.

Cut a slit in the top of the potatoes and use a fork to smash the inside of the potato. Add butter, parsley flakes, and salt. Stir to combine.

Top potato with shredded cheese.

BBQ Turkey Stuffed Potatoes

This is a delicious and unique way to use up all those turkey leftovers!

Prep Time 15 minutes
Cook Time 45 minutes
Total Time 1 hour

Ingredients

  • 2 Large Potatoes
  • 1 cup shredded turkey
  • ½ cup BBQ sauce
  • 2 tablespoons butter
  • 1 teaspoon parsley flakes
  • 1 teaspoon salt
  • 1 cup shredded cheddar jack cheese
  • Chopped green onion and sour cream for garnish (optional)

Instructions

  1. Preheat oven to 400 degrees.
  2. Brush potatoes with olive oil and season with salt. Place in preheated oven and bake for 35 to 45 minutes.
  3. When potatoes are finished baking, place turkey and BBQ sauce in a small skillet. Stir to combine and cook until warm. Remove from heat and set aside.
